The Brewery

After the first 10 years of brewing in a neighbour’s tumble-down farm buildings (or glorified shed!), we put our money where our mouth is – big thank you to Triodos Bank (ethical bankers with a conscience) – and bought 130 acres of the next-door farm. We immediately set about converting what had been 50 years of agricultural monoculture to organic farming and built a brand-new brewery smack bang in the middle.

We sunk a borehole to supply pure, unadulterated water, to brew a range of core organic beers in small 5000lt batches. We also use the old stone farm buildings and Dutch barn adjacent to the new brewhouse for storage and our barrel-ageing projects. Including seasonal Flemish red ales in port pipes, Baltic Porter in Heaven Hill bourbon barrels, Barley Wine in sherry butts, Sour beers, Brett beers, and many, many whisky cask-aged beers.
