YEAST eats the sugars extracted from the malt producing alcohol and CO2. Black Isle Brewery propagates its own fresh yeast which plays a vital contribution to the character of the beer.
Soft, pure and fresh mountain WATER is used in every brew.
Sharing the same family as nettles and cannabis, HOPS are added to the boiling beer containing acids giving bitterness to the beer, and oils imparting different flavours and aromas. These can range dramatically from the more overt citrus fruits such as oranges, lemons and grapefruit, to richer deeper flavours of raisin, nut and spice.
